Ingredients:

  • 1 big Bell Aubergine 
  • Parmesan slices
  • 2 big Tomatos
  • 2 big Mozarella
  • 2 tbs of Peanut
  • 1 bundle of fresh Basil
  • Salt-Black Pepper
  • 2 tbs of grated Parmesan
  • Olive Oil

 Method of Pesto: Put peanuts, olive oil, salt-pepper, basil into blender and make a intense sauce.

Method of Parmigiana: Slice aurbergine and tomatos into 1 cm slices and mozeralla in 1,5cm. Grill aubergine both sides up to 2 mins and tomatos 1mins. Put aubergine slice on plate and spread pesto over it than add tomato and mozarella. Repeat this one more time and put pesto and parmesan slices on top. Serve with pesto and virgin olive oil.
